The magic of leftover pie dough...

Pocket pies!

Homemade Poptarts ~ the ultimate quarantine snack!

Flaky, buttery, just sweet enough.

So easy, and you likely have all the ingredients you need in your pantry!

You will need: pie dough, jam, butter

🔸 Cut out rectangles from your pre-made dough (don't have pre-made? ...see below).

🔸 Place one rectangle on a buttered cookie sheet. Best to line with parchment, but foil works (use what ya got).

🔸 Fill the center with a dollop of your fave jam. Our trifecta...apricot, elderberry, strawberry. Be careful not to spread jam to the edge...we are about to seal in all the jammy goodness... 🔸 Place your other rectangle of dough on top and start to pinch, or press, with the tip of a fork, all the way around.

🔸 Bake at 350 for about 15 minutes, or until a light golden brown.

Easy peasy.

💥 Let cool by your kitchen window...that jam is like lava!! Optional: drizzle icing on top! Powdered sugar, Cream, Vanilla.

Don’t have pre-made dough?

Here is my Grandma Brady’s recipe. If comfort had a taste, Grandma’s pie would be it. (Thanks, Grandma B. xo)

Grandma B's Double Pie Crust

2 cups Flour

1 teaspoon salt

3/4 cup Crisco

*work well by hand

Add 5 tablespoons COLD water.

Work gently by hand until all together.

Divide in 2.

You can make double crusted pie or 1 and store the rest in the fridge or freezer.
